Champagne is alive; it evolves over time. In addition to the storage conditions that directly affect the quality of the wine and how it develops, the blend (vintage) it contains and the shape of the bottle also determine how Champagne develops over time. Vintage Champagne has a longer cellaring time. They may be opened 7 to 10 years after purchase, or even later. There is no benefit to keeping Champagne longer than recommended. All the bottles of Champagne we sell have been aged in our cellars and are ready to be opened upon purchase. Storing bottles longer may result in changes in flavor (more pronounced), color (darker), and effervescence (less). Additionally, these cuvées may develop into a different style than what we winemakers want to convey.
